Corrie Stricklin is a graduate of Arkansas State University with a degree in Nursing. After working as a nurse for several years Corrie put her career on hold to be at home with her young children. She moved to several surrounding states with her husbands career over the last seven years. The family recently moved back to Jonesboro in late 2007.
It was at this time when her daughter Emilee began having severe stomach pains, much like Corrie had endured her entire life. She sat out to find the reason for her illness. After seeing several doctors in the Jonesboro area she found a wonderful doctor who took the time to listen to the problems and was determined to find the cause. A series of tests finally revealed that Emilee had Celiac Disease. A few months later Corrie would have these same tests run and she too was diagnosed with the disease.
"We were not familiar with Celiac Disease so this was a very scary time for our family". She quickly found that there was no cure for the disease and that it could only be controlled by diet. After only two weeks of beginning a Gluten-Free diet, both Corrie and Emilee were free of stomach pain. Corrie is overwhelmed with joy that she can finally live pain free. After all these years of being told by every doctor "it's all in your head" or "it's irritable bowl syndrome" it feels good to finally know why!
Corrie immediately went to local health food stores and supermarkets, only to find that the selection was slim and the quality and taste of the foods was marginal. "I was devastated after our first shopping experience". Next Corrie began shopping online. There were many different web sites and it too was very overwhelming.
